Delicious drizzled over sliced tomatoes and fresh mozzarella cheese. Makes a perfect dressing for leafy green, potato, pasta and rice salads. Toss with sliced strawberries and blueberries for a delicious dessert combination.     Coat the bottom of a baking dish with some of the butter, arrange the pineapple slices and bake at 450 for about 15-20 minutes.     Season chicken with thyme, salt and pepper on both sides. Heat oil in skillet over medium heat. Add chicken to preheated pan and cook 7-8 minutes per side, until chicken is cooked through. Reduce heat to medium and add balsamic to pan. Stir constantly for one minutes, until glaze thickens and comes together. Pour glaze over chicken and serve.

    Balsamic-Glazed Salmon Fillets

    Preheat oven to 400. Line a baking sheet with foil and spray with oil. Coat a small saucepan with oil. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine balsamic, mustard and salt and pepper. Simmer, uncovered for about 3 minutes or until slightly thickened. Arrange salmon on baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano. Bake in preheated oven 10-14 minutes until fish flakes with fork. Brush fillets with remaining glaze.
