Toasted Pumpkin Seeds with Sugar and Spice

1 cup raw pumpkin seeds, rinsed and dried
6 T. white sugar, divided
¼ t. salt
½ t. pumpkin pie spice
1 T. OLIVE MILL Vanilla Oil

Preheat oven to 250.  Spread pumpkin seeds in a single layer on baking sheet.  Toast approximately 45 minutes until dry and toasted.  In a large bowl, stir together 2 T. of sugar, salt and spice.  Set aside.  Heat the oil in a skillet over medium heat.  Add seeds and remaining sugar over them.  Stir until sugar melts, about 1 minute.  Pour seeds into spice bowl until coated.  Allow to cool before serving.
