Smokey Onion Biscuit Squares

1 small onion, chopped
2 T. OLIVE MILL Onion oil
¼ t. sugar
1 garlic clove, minced
1 ½ cup biscuit/baking mix
½ cup 2% milk
1 egg
¾ lg. smoked mozzarella cheese, shredded, divided
1 t. chipotle seasoning mix

In a small skillet, cook onion in oil under tender, add sugar, cook 10-15 minutes longer.  Add garlic; cook for 1 minute.  Cool.  In a small bowl, combine the biscuit mix, milk and egg.  Fold in half of the cheese and chipotle seasoning.  Transfer to greased 8×8 pan.  Sprinkle with remaining cheese.  Bake at 400 for 18-22 minutes.  Cut into squares and serve warm.
