Recipes

Dipping Oil

½ cup OLIVE MILL Parmesan Oil
2 garlic cloves
½ t. dried oregano
1 t. chopped fresh rosemary
2 t. chopped fresh thyme
Pinch of salt and pepper
Crusty bread

Mix all seasonings in a bowl, drizzling the oil over top.  Dip crusty bread cubes and ENJOY!

Spaghetti with Garlic/Parmesan Oil

1 lb. spaghetti
½ cup OLIVE MILL Parmesan Oil
4-5 garlic cloves, finely sliced
1 t. dried chili flakes
¼ cup fresh parsley
Salt to taste

Bring a pot of salted water to boil and add spaghetti. Cook until soft, but little bite. While cooking to make the sauce – remove seeds from chilies and finely chop. Peel and finely slice the garlic cloves. Heat the oil gently in a pan, add garlic and chili and cook a few minutes until garlic is pale gold, taking care not to burn. Stir in chopped parsley. Drain the spaghetti, reserving ½ cup cooking water. Add spaghetti to the pan, stir well to coat with oil, add reserved water if needed to keep moist. Cook an additional minute to heat through. Add additional parmesan oil and parsley if desired.
