Potatoes and Onions
2 pounds new potatoes, (white, red or Yukon gold), scrubbed and halved
1 lb. onions, peeled
¼ cup OLIVE MILL Roasted onion oil
2 t. dried rosemary
1 t. each salt and black pepper
Preheat oven to 400. In a large bowl, toss together all of the ingredients. Spread the mixture in a single layer sheet. Bake until potatoes are golden brown, about 40 minutes. Serve immediately
