Linguine Pasta with Shrimp and Tomatoes

2 T. OLIVE MILL olive oil, such as Ascalana
3 cloves garlic, minced
4 cups diced tomatoes
1 cup dry white wine
2 T. butter
Salt and pepper to taste
16 oz. linguine pasta
1 lb peeled and deveined shrimp
1 t. Cajun seasoning
2 T. OLIVE  MILLolive oil, such as Ascalana
Heat 2 tables of oil in a saucepan over medium heat.  Stir in the garlic; cook 2 minutes.  Add the tomatoes and wine.  Bring to a simmer and cook 30 minutes, stirring frequently.  Once the tomatoes have simmered into a sauce, stir in the butter and season with salt and pepper.  Fill a large pot with water, when boiling, stir in linguine and return to a boil.  Cook the pasta about 11 minutes until done.  Season shrimp with seasoning, salt and pepper.  Heat 2 T. oil in skillet, stir in shrimp and cook until done, about 5 minutes.  Stir shrimp into pasta and add sauce.  Serve.
