Chipotle Marinated Grilled Chicken
3 chipotle peppers in adobe sauce
2 garlic cloves
¼ t. cayenne pepper
¼ t. paprika
1/8 t. ground black pepper
1/8 t. ground cumin
2 T. lime juice
2 T. Worcestershire sauce
2 T. honey
¼ cup OLIVE MILL Traditional Balsamic
¼ cup OLIVE MILL Chipotle olive oil
4 skinless chicken drumsticks
Place all ingredients except chicken in blender. Puree until no chunks remain. Pour ¼ of the marinade into a small dish and set aside. Rub salt onto each drumstick and place in re-sealable bag. Pour in remaining marinade and place in refrigerator at least 2 hours. Preheat grill and lightly oil the grate. Remove chicken from marinade and discard bag. Cook legs on grill until internal temperature reads at least 165 degrees. Once completely cooked baste well with remaining marinade and cook additional 2 minutes per side to glaze.
