Shrimp, Cucumber & Artichoke Hearts Salad
- 1 Lb. cooked jumbo shrimp
- 1 tablespoon Italian seasoning
- Juice of lime
- Salt and pepper
- 6 cups spring mix greens
- ½ cucumber, peeled, halved and thinly sliced
- 14 oz. jar quartered artichokes, drained
- 1 small red onion, thinly sliced
- ½ cup crumbled feta cheese
- Vinaigrette: salt and pepper
- 1/2 cup of THE OLIVE MILL LIME OLIVE OIL
- ½ cup of THE OLIVE MILL LEMON CUCUMBER BALSAMIC VINEGAR
- 1 teaspoon Italian Seasoning
- Minced garlic
In a medium bowl, add shrimp seasoning and lime juice. Let marinade in the refrigerator for up to two hours. Drain and set aside.
In a large bowl, add the greens, cucumber, artichoke hearts, red onions and feta.
In a small cup, add salt, pepper, seasonings, oil and balsamic. Whisk until combined.
Spread shrimp across the top of salad and drizzle lightly with vinaigrette and serve.
