Saffron Rice
8 T. OLIVE MILL Spanish Castile or Hoji Blanca extra virgin olive oil
¼ c. diced onion
1 cup uncooked long grain white rice
2 cups water
½ t. dried parsley
1 pinch OLIVE MILL saffron threads
3 drops yellow food coloring
Heat oil in a medium pot over medium heat. Cook and stir onion until golden. Add rice, and stir to coat. Stir in water, parsley flakes, saffron and 3 drops food coloring. Reduce heat, cover and simmer for 20 minutes.
