Balsamic-Glazed Salmon Fillets
6 5 oz. salmon fillets
4 cloves garlic, minced
1 T. white wine
1/3 cup OLIVE MILL Honey Balsamic
4 t. Dijon mustard
Salt and pepper to taste
1 T. chopped fresh oregano
Preheat oven to 400. Line a baking sheet with foil and spray with oil. Coat a small saucepan with oil. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine balsamic, mustard and salt and pepper. Simmer, uncovered for about 3 minutes or until slightly thickened. Arrange salmon on baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano. Bake in preheated oven 10-14 minutes until fish flakes with fork. Brush fillets with remaining glaze. Transfer salmon to platter, leaving the skin behind.
