A simple one pan dish that comes together in 30 minutes!
Strawberry Lime Chicken
3-4 boneless skinless chicken breasts pounded to approximately 1” thick
3 T. THE OLIVE MILL PERSIAN LIME OLIVE OIL (Divided)
3 cloves garlic minced or crushed
5-6 T. THE OLIVE MILL STRAWBERRY BALSAMIC VINEGAR
1-2 t. fresh lime juice
Salt & pepper to taste
2 c. chopped fresh strawberries
3 T. chopped fresh basil (for garnish)
Marinate chicken breasts in mixture of 1T. Lime Olive Oil, 2-3 T. Strawberry Balsamic, and minced garlic. Season with salt & pepper.
Heat large skillet to medium heat. Add remaining oil (adding more, if needed) to pan and cook chicken for 4-5 minutes per side until golden brown and cooked through. Set aside. Meanwhile, mix remaining strawberry balsamic, lime juice, salt & pepper. Toss strawberries with mixture. Top cooked chicken with strawberry mixture and garnish with chopped basil.
*Bonus recipe: Strawberry Lime Vinaigrette
Whisk together:
2 T. Fresh lime juice
2 T. Strawberry balsamic
1 t. Dijon mustard
2 t. honey
¼ c. Lime oil
Salt & pepper to taste
Use dressing on a salad of spinach, arugula or romaine (or combination of greens) and sliced fresh strawberries.
