June Recipe of the Month
This twist to a classic Caesar salad recipe is a fresh and healthy way to fill up your day!
Lemon Garlic Shrimp Caesar Salad
¼ cup croutons
1 lb. raw shrimp (peeled and deveined)
1 t. THE OLIVE MILL OLIVE OIL
Juice of ½ lemon
1 T. minced garlic
Pinch of salt and pepper
¼ cup diced, cooked bacon
1 egg, hard boiled
4 cups Romaine lettuce, washed and dried
½ an avocado
¼ cup shaved parmesan cheese
Dressing: ¼ cup non fat Greek yogurt
2 T. + 1 t. THE OLIVE MILL PARMESAN OIL
2 T. THE OLIVE MILL GREEK SEASONING BALSAMIC
Salt and pepper
Combine the shrimp in a shallow bowl with lemon juice, garlic, salt and pepper. Marinade for 10 minutes or more. Using 1 teaspoon of oil, cook the shrimp in a pan 2-3 minutes per side. Set aside. For dressing; combine the yogurt, oil, balsamic, salt and pepper in a small blender. To assemble salad; combine lettuce, shrimp, bacon, avocado slices, parmesan cheese and croutons. Pour over the salad; mix well to combine. Slice the egg and arrange on top.
