Perfect for a refreshing summer dinner!
Sweet & Spicy Pineapple Shrimp Stir-Fry
4 T. THE OLIVE MILL CHIPOTLE OLIVE OIL, DIVIDED
1 lb. medium shrimp, peeled and deveined
2 cups fresh pineapple, sliced and cut bite size
1 large red bell pepper, chopped into bite size pieces
½ CUP THE OLIVE MILL PINEAPPLE BALSAMIC
3 green onions, sliced thin
Rinse the shrimp and pat dry with a paper towel. In a large skillet, over medium heat 2 T. oil. Add the shrimp, let it cook about a minute, then start flipping over making sure it is all cooked through, about another minute, remove to a plate. Reduce the heat and add remaining oil to the hot pan. Add the peppers and let them cook about 2 minutes; then add pineapple tossing with peppers, cook another 1-2 minutes. Add the balsamic, stir and increase the heat to high, tossing everything well. Sauce with thicken slightly. Remove from the heat and add the green onions. Serve by itself or over rice.
