ZUCCHINI PANCAKES WITH YOGURT SAUCE

2 cups grated zucchini
2 eggs, beaten
½ c. all-purpose flour
¼. c. each grated Parmesan cheese and shredded mozzarella
¼ c. chopped onion
Salt & pepper to taste
2 T. THE OLIVE MILL BASIL EXTRA VIRGIN OLIVE OIL

Place zucchini, eggs, flour, Parmesan and mozzarella cheeses, onion, and
salt and pepper in a medium bowl and stir until well combined.
Heat oil in skillet over medium high heat. Scoop equal portions into hot oil
and fry, working in batches until golden brown (a few minutes per side).
Yield: 12-2” pancakes or 6-4” pancakes
Note: For protein, feel free to add cooked and flaked salmon.

YOGURT SAUCE

½ c. mayonnaise
2/3 c. nonfat Greek yogurt
½ c. crumbled feta cheese
1 T. fresh lime juice
Chopped fresh basil and/or mint to taste
2 T. THE OLIVE MILL WHITE MOJITO BALSAMIC VINEGER
Mix above ingredients and serve with pancakes.
