Spaghetti with Clams
4 slices bacon, diced
2 T. OLIVE MILL Olive oil, such as Picual
4 cloves garlic, sliced
9 oz. bag baby spinach
2 lb. thin spaghetti
13 oz. can minced clams in juice, undrained
¼ t. red pepper flakes
Juice of ½ a lemon
Bring large pot of salted water to boil. Heat bacon in skillet over medium heat. Cook until crisp. Remove to paper towels. Add oil and garlic to skillet. Cook 2 minutes stirring, stir in spinach and cook 3 more minutes. Meanwhile add spaghetti to boiling water. Cook 6 minutes and drain. Return to pot. Stir clams with their juice and pepper flakes into skillet with spinach. Cook 3 minutes. Add spinach mixture to pasta along with lemon juice. Toss to combine; serve with lemon wedges on side.
