Roasted New Potatoes with Carmelized Onions and Truffle Oil
1 lb. small new potatoes, scrubbed, quartered
1 large yellow onion, peeled, thinly sliced
3 T. OLIVE MILL Olive Oil
Kosher salt and pepper
OLIVE MILL Truffle oil for drizzling
Preheat oven to 400. Put onions and potatoes in a sturdy roasting pan. Pour 3 T. oil over them and toss to coat. Liberally sprinkle salt and pepper over potatoes and onions. Spread the potatoes out so they are in a single layer in the pan. Place in oven. Cook for 40 minutes until golden brown and cooked through. Place potatoes in a serving dish, sprinkle with truffle oil. Toss to coat.
