Delicious Orange and Cranberry Salad
Dressing: ¼ cup OLIVE MILL Olive oil
2 T. OLIVE MILL White Peach Balsamic
1 T. lime juice
Salt and pepper
4 navel oranges, peeled, seeded, sliced
½ small red onion, thinly sliced
1 cup dried cranberries
3 oz. baby spinach leaves
3 cups fresh basil leaves
1 cup roasted salted pumpkin seeds
Mix all dressing ingredients together in a large bowl. Stir in oranges, onion and cranberries. In large salad bowl, combine the spinach and basil. Just before serving toss the dressing mixture with greens, sprinkle with pumpkin seeds and serve!
