Chinese Chicken Salad

Chinese Chicken Salad
1 head lettuce
1 cup chopped cooked chicken breast
8 oz. can chopped water chestnuts
1 bunch green onions, chopped
1 cup sliced almonds
5 oz. chow mein noodles
½ cup OLIVE MILL oil, such as Leccino
4 t. OLIVE MILL Tangerine Balsamic
½ t. salt
¼ t. pepper
1 T. poppy seeds

In a small bowl, whisk together oil, vinegar, salt, pepper and poppy seeds, set aside.  Wash lettuce and tear into bite sized pieces.  In a large bowl, add lettuce, onions, water chestnuts and chicken.  Just before serving, top with almonds, noodles and dressing.  Toss lightly.
