Apple Walnut Pizza with Caramelized Onions
1 T. OLIVE MILL Olive oil, such as Leccino
1 large red onion, thinly sliced
2 T. OLIVE MILL Red Apple Balsamic
1 ½ cups (6 oz.) shredded Cheddar cheese
4 oz. crumbled Gorgonzola cheese, divided
Pizza Dough for 1 large pizza
1 large Granny smith apple, cored and thinly sliced
½ cup coarsely chopped walnuts
Heat oil in a small saucepan, add onion and balsamic. Reduce heat to medium low and cook until onions caramelize, let cool. Spread dough onto pizza pan. Sprinkle cheddar cheese and ½ cup gorgonzola cheese over prepared pizza dough, top with onion mixture. Arrange apple over onion mixture; top with remaining gorgonzola, sprinkle with walnuts. Bake at 500 degrees for 5-7 minutes until brown and bubbly.
