Maple & Cranberry Glazed Roasted Butternut Squash and Brussels Sprouts

1 medium butternut squash, peeled and cubed
1 lb Brussels sprouts, trimmed and halved
3 tablespoons The Olive Mill Garlic Extra Virgin Olive Oil, divided
Salt and black pepper, to taste
1 teaspoon dried thyme (or 1 tbsp fresh thyme)
**Toss above ingredients together and spread on sheet pan, roast in 450 degree oven 20 – 25 minutes. Remove egetables from oven, toss with glaze, and return to roast for 5–8 more minutes until caramelized.
FOR GLAZE:
1/2 cup 100% cranberry juice
1/2 cup dried cranberries, finely chopped
3 tablespoons maple The Olive Mill Maple Balsamic Vinegar
**Simmer glaze ingredients until slightly reduced and thickened (6–8 minutes).
Remove vegetables from oven, toss with glaze, and return to roast for 5–8 more minutes until caramelized.
Transfer to a bowl and garnish as preferred with:
4 oz. Goat cheese, Feta or Blue cheese, crumbled, dried cranberries, parsley
