This easy balsamic salmon with a quick strawberry relish is perfect for spring!Ready in under 30 minutes with just a handful of ingredients
Brown-Sugar Salmon & Strawberries
1/3 cup packed brown sugar
1 ½ T. OLIVE MILL LEMON OLIVE OIL
1 t. ground mustard
1 t. ground allspice
½ t. salt
4 salmon fillets
Relish: 1 T. minced fresh mint
1 ½ T. OLIVE MILL LEMON OLIVE OIL
1 T. lemon juice
1 cup fresh strawberries
¾ cup OLIVE MILL STRAWBERRY BALSAMIC
1 small cucumber, finely chopped
In a small bowl, mix brown sugar, oil, mustard, allspice and salt; rub over flesh side of salmon. Refrigerate, covered 1 hour. For relish in another bowl, add all ingredients, toss to coat well. Place salmon on oiled grill rack, skin side down. Grill, covered, over medium heat 8-10 minutes until fish flakes easily with fork. Serve with relish.
