Twice Baked Sweet Potatoes
6 sweet potatoes
4 T. OLIVE MILL Vanilla olive oil
8 oz. cream cheese, softened
1/3 cup brown sugar
¾ t. salt
½ t. pepper
1/3 cup chopped walnuts
Preheat oven to 350. Rub sweet potatoes with half the oil. Wrap in aluminum foil and bake for one hour until soft. Meanwhile in a large bowl combine cream cheese, brown sugar, remaining oil, salt and pepper. Cut potatoes in half and scoop flesh into the bowl with the cream cheese mixture. Mix well and fold in nuts. Spoon this mixture back into skins. Bake for 5 minutes until heated through.
