Spicy Pesto Chicken and Pasta
16 oz. uncooked OLIVE MILL pasta
3 T. OLIVE MILL extra virgin olive oil
1 T. hot chili paste
1 lb. skinless, boneless chicken breasts-cut into 1″ pieces
6 T. OLIVE MILL Pesto alla Genovese
½ c. grated Parmesan cheese
½ c. chopped cilantro
Bring a large pot of water to a boil. Place pasta in and cook 8-10 minutes and drain. Heat olive oil in a large skillet over medium heat. Mix in the chili paste and chicken. Cook and stir chicken 10 minutes until browned. Toss the cooked pasta, pesto cheese and cilantro into the skillet and serve.
