Broiled Salmon Pesto
1 lb. salmon fillets
2 lemons
1 ½ c. OLIVE MILL Pesto alla Genovese
½ c. white wine
Lightly oil a baking pan large enough to accommodate the fish. Place salmon in a pan skin side down. Squeeze juice of one lemon and white wine over fish. Marinade 15 minutes. Pour off marinade Preheat broiler. Coat the top side of the fish with thick layer of pesto. It should be about 1/8″ – ¼” thick and cover the surface of the fish. Place fish under broiler about 9″ from heat. Broil for 8-10 minutes until desired doneness. Pesto will form a heavily browned crust. Remove from the oven and set aside for a few minutes. Squeeze half of second lemon over fish. Serve at once.
