Turkey with Balsamic Pears
4 turkey cutlets, patted dry
Salt and pepper
3 T. OLIVE MILL olive oil, such as Leccino
3 large shallots, thinly sliced
3 garlic cloves, minced
2 t. chopped fresh thyme leaves
¾ cup chicken broth
2 T. OLIVE MILL Pear Balsamic
2 t. mustard
2 BoscPears, cored and sliced into thin wedges.
Season turkey with salt and pepper. In a large skillet, heat 1 T. oil and cook turkey until cooked through. Transfer to a plate, cover and keep warm. Add 2 T. oil to skillet, heat and add shallots, garlic, thyme, salt and pepper. Cook and stir until shallots begin to turn brown, approximately 6 minutes. Meanwhile in a small bowl, whisk broth, balsamic and mustard. Add pears to skillet and cook, stirring occasionally until they begin to soften. Add broth mixture, cook and cover 5 minutes. Uncover and cook until pears are tender and liquid is almost evaporated about 3-5 minutes. Return turkey to skillet, along with any juices. Add thyme, toss to combine and serve.
