Big Italian Salad

Dressing:
1 cup loosely packed fresh parsley, chopped
10 big leaves basil
¼ t. oregano
2 cloves garlic
¼ cup OLIVE MILL Red Wine Vinegar
¾ cup OLIVE MILL Basil olive oil
¾ t. salt
¼ t. pepper
Salad:
1 large head romaine lettuce, washed, dry and cut into bite size pieces
1 large red pepper, chopped
1 cup chopped cucumbers
1 large carrot, peeled into ribbons
Handful grape tomatoes
Handful pitted olives
Feta cheese, crumbled to taste

Make the dressing in a food process to blend.  Place all salad ingredients in a large bowl.  Right before serving, add about half the dressing and toss well.  Serve remaining dressing on the side.
