BEET & STRAWBERRY SALAD

This salad is a winner for it’s ease and simple fresh ingredients.

 

Vinaigrette:

• 3 tablespoons THE OLIVE MILL LEMON OLIVE OIL
• 1 tablespoon THE OLIVE MILL Blueberry Balsamic Vinegar
• 1 teaspoon local honey
• 1/4 teaspoon kosher salt
• 1/4 teaspoon cracked black pepper
• 1 teaspoon finely chopped fresh rosemary

Salad:

• 2 cups spinach, torn
• 1/4 cup sliced strawberries
• 1/4 cup blueberries
• 1/4 cup blackberries
• 1/2 cup thinly sliced raw beets
• 3/4 ounce crumbled goat cheese
• 1 1/2 tablespoons chopped walnuts

To prepare vinaigrette, combine first six ingredients and mix well. To prepare salad, combine spinach, fruit and beets on a plate and sprinkle with cheese and walnuts. Add dressing and toss well.
