BERRY & MELON CHICKEN WRAP
WRAP:
2 Spinach Tortillas
2 cups fresh Spinach Leaves
2 Chicken Breasts, grilled and sliced
½ cup Melon (cantaloupe or honeydew melon), diced
½ cup Blueberries, washed and rinsed
¼ cup Red Onion, thinly sliced
½ cup Feta Cheese, crumbled
¼ cup Honey Roasted Walnut Pieces
VINAIGRETTE:
- ½ cup Blueberries
2 Tablespoons Honey
2 Tablespoons THE OLIVE MILL BLUEBERRY BALSAMIC
2 Tablespoons THE OLIVE MILL BLOOD ORANGE OLIVE OIL
Salt and Pepper, to taste (Try our MAUI ONION SEA SALT BLEND for a sweet, flavorful option!)
Blend all vinaigrette ingredients in a blender or food processor until well combined, approximately 1 minute, set aside. For wrap, place Tortillas down onto a flat surface, top each Tortilla with 1 cup of Spinach, 1 cup of Chicken, half of the Melon, half of the Blueberries, 4 to 6 slices of red onion, half of the Feta and half of the Walnut Pieces. Season with Salt and Pepper. Drizzle the desired amount of vinaigrette on top of ingredients, wrap them up and drizzle each with more vinaigrette, if desired.
