Herbed Greek Potatoes with Feta Cheese

5 lbspotatoes, cut into wedges
6 cloves garlic
¾ cup Tuscan Herb oil
1 cup water
¼ cup fresh lemon juice
Salt and pepper to taste
1 ½ T. oregano
8 oz. crumbled feta cheese

Preheat oven to 450. Lightly oil large baking dish. Stir the potatoes; garlic, oil, water lemon juice, salt had pepper together in a bowl until the potatoes are evenly coated; pour into prepared baking dish. Roast in oven until potatoes are brown, about 40 minutes. Season with oregano. Add more water if looking dry. Return to oven and bake about 40 minutes more. Top with feta cheese and serve.
